Sourdough is next on my list, but I don't know how to make starter or where to find it ... that's super intimidating! Yes, definitely register for a Staub or Le Crueset Dutch oven ... there's a million ways to use it beyond bread. 5.5 quarts is a good size.
I took a sourdough class about 6 years ago and they gave us some starter. I have been feeding that thing ever since. When we moved out of state, I actually put it in a cooler on my front seat and treated it like it was the Hope Diamond during the entire 2-day drive!

Yes, love this so much! I started baking my own bread a few years back and haven't turned back - it is so much easier than people make it out to be! Sourdough isn't that challenging either if you get started with a good starter. Not too long ago I thought I finally killed my starter, so I order a dehydrated version from here (https://wildoakfarmsmo.com/products/dehydrated-sourdough-starter) and it was super easy to get going.
